It's not that uncommon for demonstrations to simply disable HUD aspects so that the video focuses on the environment and player graphics, etc, especially when it's all being developed. Many of UT3's demonstration videos from the past year or so have included no HUD or crosshair, and yet you can be 100% certain both will be present there.
It's not unrelated from the issue of whether a 3rd person view will be included; it's shown that way in vids but we simply don't know if that's merely for presentation purposes or if gameplay will actually include it.
I would be very very surprised if you didn't have a crosshair for at least the vast majority of weapons in Huxley (I could maybe see an argument for specific weapons not having them, for balance purposes, but that's a whole other discussion).
